Which bed length do I have on my Toyota Tacoma?

Measure from the inside of the bulkhead (the wall right behind the cab) to the inside of the closed tailgate, at the floor. Round to the nearest half-foot and match it to the bed options in the table above for your model year - the door-jamb tag or window sticker also states it if the truck still has one.

Will a 4x8 sheet fit flat?

No. The Toyota Tacoma's widest bed is only 44.7 in between the wheel wells, short of the 48 in a 4-foot-wide sheet needs, so a 4x8 sheet rests on top of the wheel wells rather than lying flat on the floor.
